Tuna Casserole With a Twist

3 cups farfalle pasta

1 jar alfredo sauce

½ cup chicken broth

1 8.5 oz can artichoke quarters, drain all liquid

16 cherry tomatoes cut in half

½ cup grated parmesan cheese

1 12 oz can albacore tuna packed in water drained.

¼ cup sun dried tomatoes (optional)

¼ cup frozen peas (optional)

8 kalamata olives (optional)

Buttered bread crumbs (optional)

I suggest you take all your options.

Cook pasta, drain, do not rinse.

Return cooked pasta to pan.  Mix in all items except tuna and bread crumbs.  Fold in tuna, and top with bread crumbs.

Transfer to an 8x8 glass baking dish.

When ready to serve top with bread crumbs and bake at 350 for about 30 minutes.

Richard--this wasn't quite the type of post I expected when I followed you here from comment on my recent post, but I like it.  I may have to put the ingredients on my grocery list so I can try it this weekend.  Also, I didn't realize that AR had the groups you included this post in.  Thanks for enlightening me.  Mary

Thanks for your comments.  I think you will enjoy this dish.

Also I did enjoy you success tips blog.  Did you know there is also an Active Rain group for instructors?

Hi Richard... Now this one sounds interesting.  It kind of has a Mediterranean spin to it!

Hi Richard, I really like tuna casserole and this one is so much different than the one I usually fix. I will keep this one for the next time which usually is in the fall of the year. Thank you!

Hi Richard, This sounds good! I love all the extra flavors that the artichoke and kalamata olives add to the dish. I think I'll make this sometime!

Have a great day,
