My Dad's Cornbread Recipe

My Dad's Corn Bread




4 cups corn meal (mix - any brand - self rising)

½ tsp salt

Pinch of baking soda

3 to 4 pinches of baking powder

1 egg

Buttermilk - as needed

Olive oil - as needed

 Preheat oven to 425

Pour olive oil in pan* & heat in oven until hot

Mix all other ingredients - add enough buttermilk until batter will pour smoothly

Stir until smooth

Pour in heated pan & shake 

Bake 30 minutes @ 425 degrees or until golden brown 

Should serve about 10 

* I used a seasoned cast iron skillet
