Chunky Salsa

I bought a case of tomatoes last week at the farmer's market in Glen Burnie.  So, I've been busy canning them and putting them to good use before they go bad.  I made 12 jars of chunky salsa yesterday.  Here's my recipe, it's delicious.  I have been using this recipe for years and my family loves it.  We eat more salsa in our house than ketchup.

8 cups chopped, peeled tomatoes

4 cups chopped, seeded cubanelle or anaheim or sweet banana peppers

2 cups chopped onions

2 cups  cider vinegar

1 cup chopped, seeded sweet red peppers

1 cup chopped, seeded jalapeno peppers (fresh, not bottled)

4 cloves garlic, minced

1 5 1/2 oz can tomato paste

2 tbsp sugar

1 tbsp salt

2 tsp paprika (use hot Hungarian Paprika)

1 tsp dried oregano

1/4 c. chopped fresh cilantro (optional)

In a large, heavy saucepan, bring to a boil the tomatoes, peppers, onions, vinegar, red peppers, jalapeno peppers, garlic, tomato paste, sugar, salt, paprika and oregano, stirring often.  Reduce heat to medium-low and simmer mixture for about an hour or until thick enough to coat a spoon.  Stir in cilantro and simmer for 5 minutes longer. 

Fill and seal jars.  Process in boiling water bath for 20 minutes.  Makes about 9 cups.

Note:  you can adjust the heat but increasing jalapenos and decreasing cubanelle or decreasing jalapenos and use fewer cubanelle.  Be sure to wear rubber gloves when handling hot peppers.  A friend of mine didn't wear rubber gloves and ended up going to the ER for 1st degree burns on her hands.

Try adding a teaspon or two of ground Cumin to the recipe.

It will really blend everything in well.

Then when you're done, bring the salsa to your open, and GO SELL A HOUSE!!!

June, I always make salsa for holidays. It's great to snack on while before a picnic. I never thought of putting paprika in it.

Do they have fresh jalapenos up there in Maryland? We're close to Mexico and finding fresh jalapenos out here is like getting blood out of a turnip.

Jim, we are still far enough south to grow jalapenos here.  I get fresh ones from the local farmer's market and they are wonderful.  I have a bunch still in my fridge, I had some in my huevos rancheros for breakfast yesterday.
