An Interesting Greek Orzo Salad Recipe

A number of my friends and family consider me a fairly serious cook.  But, the truth is that cooking is merely another of my passions.  Today, I had a number of folks over to my home for a little cook-in.  We put a few shish kabobs on the grill, and kept it simple with a lot of fresh fruit, wine, and salads.  Here's a recipe to a salad that I made, that seemed to make a huge hit.  Perhaps you would enjoy trying it.

 

 

 

  • 1 Box Orzo Pasta
  • 1/3 Cup Sun Dried Tomatoes (thinly julienne)
  • 1/3 Cup Crumbled Feta Cheese
  • 1/4 Cup Pine Nuts
  • 1/3 Cup Diced Red Pepper
  • 1/3 Cup Diced Green Pepper
  • 1/3Cup Craisins (optional)
  • 1 Cup Kalamata Olives  
  • 3 Tablespoon Capers (optional)
  • Balsamic Vinaigrette (as needed)

Cook Orzo Pasta, and let cool.  Combine all ingredients, and keep chilled in refrigerator before serving.

Myrl, oh, I am saving this and going to make it for sure! My hubby makes mean shish kebobs or shashlik as he calls it. Georgian (as in foreign country, not state) actually. He marinates the lamb with onions in red wine vinegar for 24 hours. Just meat, no veggies. I always do the veggies separate.My husband is Russian, and boy does he cook some really good food. Most of it is a lot of work, but worth it always!

Ann - I am a lover of Kalamata olives especially.  But the feta chees and sundried tomatoes really bring it all together. . .But then you really can't leave out the pinenuts and the capers, or the craisins either:-)

Andrea - I was fortunate enough to work at an international software development company for 8 years.  We had people from all over the globe, and the recipes I learned from them, and the dishes we cooked together were something out of a fantasy.  I learned to cook, Lebanese, Italian, Indian, Pakistani, Ukranian, Chinese, Korean, Vietnamese, Carolina Low Country, Spanish, Portuguese, Iranian. . .I had the time of my life:-)

Absoutely beautiful. While I've experimented with lots of other kinds of pasta for cold dishes, never orzo, so I am looking forward to trying this. I think the craisins a particulalry innovative addition!

Janice - I like orzo because it's a little different, and it fits on my grandkids spoons a little easier than some of the larger pastas.

I tried your recipe today and I have to tell you that my family loved it. It was yummy, yum yum. Thanks for sharing it with us ... it is now going to be a regular. In fact it will be served again next Sunday at my grandson's eleventh birthday party.
