Guava & Cream Cheese Empanadillas

 

Yields: 10 Pastries

Ingredients

·        Small Empanada Discos (Find them in the freezer section w/ the Goya products)

·        Guava Paste (Find in the ethnic section of your grocery market)

·        1 Package of cream cheese

·        Vegetable oil

·        Cinnamon & Sugar

Directions

1.                Defrost discos (Do NOT put in warm water to thaw)

2.                Preheat vegetable oil in large pot on medium high heat

3.                Combine a mixture of cinnamon and sugar in a bowl

4.                Sprinkle inside of the discos with the mixture

5.                Cut slices of guava & cream cheese

6.                Place in center of discos

7.                Fold discos in half (will make a half circle)

8.                Wet edges of discos and seal with a fork, make sure to press hard when sealing because they will split open during frying.

9.                Sprinkle exterior of the empanadillas with cinnamon and sugar mixture

10.           Place in hot oil, not BOILING, and fry until empanadillas float to the surface and look like a LIGHT brown

11.           Remove from oil and place on paper towels

For a healthier option you can bake your empanadillas in the oven at 425° for approximately 10 minutes but make sure to brush both sides with a beaten egg mixture to ensure they turn golden brown, then before baking sprinkle with the cinnamon and sugar mixture.
