Vidalia Onion Cheese Dip

With summertime comes the sweet Southern Vidalia onion.  This is a hot or warm dip that is best served with tortilla chips or my favorite Triscuits!

3 Large Vidalia Onions, chopped

2 Tbs unsalted butter

1 cup mayonnaise

8 oz sharp cheddar cheese, shredded

1/2 tsp Tabasco Sauce

1 clove garlic, minced

Preheat oven to 375f,  Saute onions in butter.  Blend with mayonnaise, cheese, Tabasco, and garlic.  Pour into a buttered casserole dish and bake at 375f for 25 minutes.  Serve with chips or Triscuits.  This will make enough for 4-6 folks that are not real hungry!  Goes great with a glass of Pinot Noir or a cold Beer!

It really is good!  Vidalia onions are so sweet, they don't really taste like an onion!
