Easy Brunch

Sometimes it's nice to take a long weekend day just to yourself, have a couple friends over and do a nice brunch without working to hard.  My favorite one is what I call my Breakfast Pizza. 

Can be made the night before and refrigerated. 

8 Eggs

1/2 small jar mushrooms

1/4 cup of pizza sauce (in a pinch use tomato sauce)

chopped pepperoni slices. use as many as you want.

Cooked sausage scrambled and cooled.

Salt and Pepper

Cheddar Cheese grated (buy the bagged stuff it's easier)

Mix all together and pour into a casserole dish.  Cook then or refrigerate overnight.  Bake at 400 degrees until golden on top.  Yummmm.

I usually just serve this with some fruit, jam, and croissants.  Makes a nice, easily put together meal.

Sybil, I like cold pizza anyway so now is this a pizza quiche?  Sound good....when the next party?  Nice post.

It's more like a quiche.  I don't know why I used pizza other than it has pizza sauce and pepperoin in it.  It is delicious thought and easy to throw together.  Enjoy!

Yeah!  I love it.  I usually put some cheese in it then put cheese all on top of it before baking.  For a really decadent brunch I will sometimes order from Williams Sonoma the frozen croissant dough and bake it up.  Kind of pricey but a nice touch for that special time.  Thanks for trying it.
