I thought I had lost this recipe right before Thanksgiving. I looked online and was not able to find anything like it. I believe I got it out of a newspaper or magazine several years ago and it has been a family tradition on Thanksgiving since. I found it just in time to make for this year's Thanksgiving. So here goes. Let me know if you try it during the holidays.
1 cup water
3/4 cup sugar
1/2 teaspoon ground ginger
1 med. pear-peeled and diced
2 cups whole cranberries
The juice and zest of one lemon
1/4 cup Amaretto liqueur
Combine first 3 ingredients in a med. pan and stir briefly until sugar has dissolved. Boil for 5 minutes and add pear. Reduce heat and simmer for 3 minutes. Add cranberries and lemon juice and zest and continue to simmer without stirring until berries pop. You will hear them popping. Remove from heat and cool. Then stir in Amaretto. Pour over a block of cream cheese and eat with crackers of your choice. Enjoy! Merry Christmas to you!
