Holiday Traditions, Chocolate Éclair Cake
I came across this delicious dessert in the early 90's at a Christmas party when I worked for Washington Natural Gas. In my 7 plus years there I marketed and sold gas appliances; furnaces, water heaters, fireplaces, gas logs, gas ranges and dryers. My job consisted of meeting people in their homes offering products to help them improve the energy efficiency and comfort of their home. Part of my time there also included the sale of windows and insulation products, again to save energy.
This dessert was brought by Sophie, if I remember correctly and I have the original copy of the hand written instructions that we pull out whenever we are inclined to make this treat. This year we brought it to our Northstone Company Christmas Party and it was a hit. So I'm happy to share it with you here.
Ingredients:
For the pastry: 1 cup water, ½ cup butter, 4 eggs
For the topping: 2 small packages of vanilla instant pudding mix, 2 ½ cups of milk, 8 oz's of Cool Whip, 2 tsp vanilla extract.
For the final touch: ½ cup of chocolate chips, 4 tsp of butter, 1 cup powdered sugar and 2 tablespoons of milk
Instructions:
Pastry
Bring 1 cup water and ½ cup butter to a slow boil.
Remove from heat; slowly add 1 cup flour and mix well.
Stir in 4 eggs, one at a time until melded together.
Spread ¼ inch think on a cookie sheet. We lined ours with parchment paper.
Bake 40 minutes at 400 degrees. Watch often to pop large bubbles, some puffing is expected.
Allow to cool.
Topping
Mix 2 small packages of Vanilla instant pudding with 2 ½ cups of cold milk and 2 teaspoons vanilla extract.
Fold in 8 oz of Cool Whip.
Spread on pastry crust and chill for 40 minutes.
Drizzle
Melt 3 oz, (1/2 cup) of chocolate chips with 4 teaspoons of butter. I use the microwave in brief bursts, stirring until smooth.
Mix 1 cup powdered sugar and up to 2 tablespoons of milk.
Put this mixture into a Ziploc bag. Cut a corner to drizzle over the pudding mixture.
Chill before serving.
Cut and serve with forks. People will want to pick this up, but it can be a bit messy. The best desserts usually are.
