I made this for open house yesterday. It is really good, super easy. Italian fix without all the carbs! My kids love it over noodles and it has lots of veggies that they normally wouldn't eat.
Italian Soup: Brown 1 lb ground Italian sausage (drain and rinse), add 1 chopped onion & 4 cloves of garlic.Saute until onions are transparent. Add 1/2 tsp of crushed red pepper, 3 tsp Rosemary, 3 tsp Basil, 3 tsp parsley, 1 bag celery chopped, 5 carrots chopped, 3 cans diced tomatoes, 2 cans white kidney beans, 1 can... red kidney beans, 12 cups of chicken broth & simmer 1 -2 hrs.
Add 1 box whole wheat noodles at the end if you like. I keep mine separate and pour the soup over them so they do not get soggy and the soup is great without noodles and has less carbs. This makes a lot and can be cut in 1/2. Great with salad.
