Debbie's Black Bean Soup
This delicious recipe came to me via my friend Debbie. She is an accomplished cook & this is just one of many yummy dishes I've enjoyed at her home. Thanks Debbie!
Debbie's Black Bean Soup2 tablespoons olive oil1 large onion,diced1 gr pepper, seeded and divided2 lg plum tomatoes, seeded and chopped4 cloves garlic,crushed1 1/2 tsp dried oregano1 1/2 tsp ground cumin1 dries bay leaf3 cans (19oz. each) black beans, rinsed and drained5 cups reduced-sodium chicken stock or broth1 cup frozen whole-kernel corn1 cup diced smoked ham1/4 cup chopped cilantro1 tsp hot red pepper sauce, or to tastegarnish : sour cream, cilantro,lime wedgesHeat oil in a 5 quart soup pot over medium heat; add onion, bell pepper and tomatoesSaute 10 mins or until onions and peppers have softened. Stir in garlic, oregano, cumin and bay leaf, then stir in beans and cook 2 minutes, stirring constantly. Add stock and bring to a boil; reduce heat to medium-low, cover and simmer 20 minutes.Using an immersion blender, puree soup until about half of the black beans are pureed ( or if using a regular blender, puree half of the soup)Stir in corn, ham, cilantro and hot pepper sauce. Cook over medium heat 3-4 mins longer, until corn and ham are heated thruLadle into bowls. Garnish with a dollop of sour cream, cilantro sprigs and a squeeze of lime, if desiredNOTE : I used about 1/2 teaspoon of red pepper flakes instead of the hot pepper sauce.
