Salmon with Curried Balsamic Orange Glaze

 

Start with the freshest and thickest piece of salmon you can buy.  Now if I could have salmon shipped from Alaska at a reasonable price I might do that because I can still taste the salmon we had there while on vacation.  The following recipe came from friends in Virginia Beach that we visited recently. 

Marinade one & half pounds  salmon 15 minutes

  • 1/2 cup balsamic vinegar
  • 2 tlbs fresh basil chopped
  • Salt & pepper as desired

Glaze

  • 2 tlbs olive oil
  • 2tsp red curry paste  (I found this in Thai aisle of my local grocery store)
  • 1/4 cup chopped green onions
  • 1/3 cup balsamic vinegar
  • 1/3 cup orange juice (1/2 orange squeezed)
  • 2 tlbs brown sugar
  • Salt & pepper as desired

Heat oil, sear salmon on both sides.  Bake in oven @ 500 for 10-15 minutes until flaky.  Do not overcook.

In skillet:  mix curry paste, onions.  Add vinegar, orange juice, brown sugar.  Reduce.  (This is important step)

Pour glaze over salmon before serving.  If you used fresh orange juice, slice remaining orange & use as garnish.

Mary, I have to go back through all your recipes because Laura tries them all....and loves them.  We need a white cream sauce...to go over a pasta/seafood.  Do you have any hidden away?  I know, it's a special request but we really want to try something GOOD!

What a fabulous salmon recipe Mary. I wonder if it would work for fresh trout as well? Hmmm, I may have to try it. I'll let you know.

Wanda--I am sure that the glaze would be very tasty with fresh trout.  I have walleye in the freezer and have been tempted to pair them together.  Let's be creative.

Mary - I love salmon and eat quite a bit of it!  I must admit I never considered using curry with a balsamic orange glaze. . .It sounds wonderful!  I'm going to give it a try!
