Homestyle Cooking with Mary: Seafood Pasta with Alfredo Sauce
Seafood options: shrimp, scallops, clam, mussels, lobster
Optional: mushrooms, green onions, red or green peppers
Veggie: baby spinach, pea pods, asparagus
Season with minced garlic, sea salt and fresh ground pepper
Saute seafood in olive oil or butter. Add mushrooms and veggies
Serve with thin spaghetti and your favorite white wine.
Alfredo Sauce
- One stick butter (not oleo)
- One egg beaten in one cup milk (1 cup total)
- Chopped fresh parsley (approx 2 tlbs)
- One teaspoon minced or crushed garlic
- Dash garlic salt
- 8 oz. Fresh grated Romano cheese
Melt butter, saute minced garlic, garlic salt & parsley. Add milk/egg mixture. Gradually add cheese. Stir constantly until thickened.
I love the versatility of this recipe. Tonight I made it with shrimp, scallops, mushrooms and baby spinach.
