How do I know what name to use to submit to directorsies? My mame, Realtor?
Titles I understand (I think), but then what about longer descriptions?
And what about "categories"? Would this be "Real Estate?" "Business?"

You want to submit whatever term you are going after with your site (i.e cypress texas real estate) and put them on the most relevant pages within directories. If you are going afte rless competitive terms then you can submit different terms to different directories and link them to the relevant pages on your site.
