This is an amazing desert and is very simple! It's in three quick steps. It's one of my mothers' recipes that's dated 10/77. Please give it a try and let me know how you liked it! I've also added a healthier version.
Deb's Strawberry Dessert
Crust:
2 C. Graham cracker crumbs (low fat)
1 Stick Margarine (coconut oil)
1/2 C. Sugar (Splenda)
Mix together with pastry blender and press into a 9x12" pan and bake 10-12 minutes at 350 degrees. Cool completely.
Filling:
8 oz. Cream cheese (low fat)
2 T. Milk
1 C. Confectioners sugar (Splenda)
1 Pkg. Dream Whip (made according to directions)
Combine the cream cheese and milk in mixer. Add the confectioners sugar until combined. Fold in the prepared Dream Whip. Spread onto crust and refrigerate until set (takes about 4 hours).
Strawberry topping:
1 C. Water and Sugar (Splenda)
2 T. Corn starch
1 Pkg. Sm. Strawberry Jello (sugar free)
1 Qt. Fresh strawberries, washed and sliced.
Cook water, sugar and corn starch until thick. Remove from stove and stir in Jello until dissolved. Add to strawberries and pour over cream cheese filling until jelled. Any fruit may be used.
Lower fat and calorie version: I use low fat graham crackers, coconut oil, Splenda, no/low fat cream cheese, sugar free jello and 2 % milk. You could probably cut the sugar some in the cream cheese filling.
