OK...OK....I am in no way a vegan or a vegetarian or even close for that matter. I do have a vegetarian brother and sister in law though. I was over their home over the weekend and they gave me a vegan pudding mix and a box of soft tofu to use with it.
Directions were to put tofu in blender or food processor and add 2-3 tablespoons of water and blend until smooth. Add pudding mix and blend 2 minutes. Dish, cool and serve. I was extremely skeptical as I am not real big on tofu but figured what the heck...how bad could it be??? It was excellent. Yes I did say excellent... and healthy??? Yup! I used 2 tablespoons of real milk but doubt that had anything to do with the taste.
Brand was Mori-nu for both the vegan pudding mix and the tofu. I think it was a great way to make a healthy dessert. There was even a recipe for banana pie on the back that sounded good as well. If you are looking for a healthy dessert, I would highly suggest you try this. I may even buy the mix and tofu to have it again. Throw in a banana and some Nilla wafers and you got a nice treat! I promise even your kids will love this!
