Safeway Sale Stimulates Cosmic Cooking!

Sounds strange.. but that is the way the Safeway ads work for me! When I read the weekly ads my Creative Cosmic Cooking genes kick in and I start to have some fun construing economical dishes!

This week the Williams, Arizona ads included 3 green peppers for $1.00 and last week yellow corn 5 for $1.00.

Think about the value here!  $0.33  per pepper and $0.20 per ear of corn! 

Cow Tip: Meal plan from grocery sale ads!  You can actually create your shopping list on line and it will organize by category.. so planning healthy meals and saving money could not be any easier if you use the Safeway tools. If you use site you can also get the weekly coupons added to your club card so no paper going green!

The ad made me start to think about Stuffed Green Peppers, one of my husbands favorites.... so off I went to create something different. I used chopped cabbage instead of rice.

Stuffed Green Peppers

  • 9 green peppers      on sale 3 for $0.99 total of $2.97
  • 1 onion     @ .49 per pound  $0.25
  • 1 turnip     @ 1.49 per pound $0.90
  • 2 ears of corn     @5 for $1.00 total $0.40
  • 4 tomatoes or 2 cans of diced tomatoes             $1.00 per can from past sale, total $2.00
  • 1/2 cabbage head               @ $0.59 per pound $0.75
  • 1 lb. ground turkey or hamburger        $2.29 
  • Italian seasoning 1 teaspoon
  • Seasoned pepper 1/2 teaspoon
  • Course salt 1 teaspoon
  • Onion or Garlic salt
  • 3 Tablespoons Olive Oil

Brown the ground turkey or beef in a skillet.  

Cut the tops off the green peppers and take the stem out.  Use the remaining of the green pepper on the top for the stuffing.  Chop the pieces from the top around the stem finely.

Put the green peppers in a microwave dish covered for 15 minutes.  Empty extra water from the inside of the peppers

Chop the onion and turnip finely.  Take the corn off the cob.

Saute the onion, turnips, green pepper and corn in a skillet with the olive oil. 

Use 1/2 a head of cabbage chopped finely and saute.

Mix all the vegetables and meat together for the stuffing.

Open the 2 cans of diced tomatoes, you can use Italian Stewed tomatoes and add the seasoning to a blender.  Mix until smooth sauce consistency.

Bake at 350 for 45 to 60 minutes.

Total Cost for 9 peppers was $9.56 plus the spices and oil.  Basically $1.06 a pepper!

Easy to freeze so great to make when the peppers are on sale! 

Ahi tuna was on sale for $5.99 per pound.. so some good grilling this week

Roses were on sale for $9.99 a dozen  Roses

Hi Carra - I use grocery ads to plan my menu, too.  You get the gold star, though, for going the extra mile with recipes.  BTW - I've never had stuffed peppers with veggie stuffing.  Sounds wonderful.

Carra:  What time is dinner?  This is great and I really appreciate the recipe!  My husband and daughter used to do all the grocery shopping -- he believed in a list (and only a list).  He taught my daughter to cut coupons from the Sunday paper and when they went shopping, she got to keep whatever amount was saved.

To this day she is an excellent shopper.

Eating fresh is not only better for you, it is also budget friendly.  I enjoyed blueberries all weekend since Henrys Market was selling them  .77cents for a half pint.

This sure does sound mighty good! I like the idea of using copped cabbage in the stuffed bell peppers. I'll have to use your recipe to make them this way for my lady and I.

I've got bell peppers, tomatoes and red cabbage right out side in our garden, our corn that I planted has not came in yet.

        I don't eat meat, but will purchase ready made just for him. Perhaps not economical at the time, but since
       they usually come in multiples & he is the only one eating, we do have extra to freeze.  Your points

Dale ~ I wish I had your garden.. we are too high at 6,800 feet for a long enough growing season and it gets cold at night.. so take some pictures of your garden and share some finished product.. that would be a fun post!

Barb ~  my daughter does not eat red meat so we do them with ground turkey.. but you can leave the meat out and put it at the end.. make some vege for you and meat for him.. that is if you like the peppers.

Georgina~Fun they work in Maui too.. did I ever tell you I lived in Kula for 3 years...worked with Tracy Stice..knew Jim Sanders too! My heart is still there..my house is mostly tropical.. so I live with the spirit of aloha in my heart... We used to have a LOT of cabbage in Kula! I'm not very good at shopping online ahead of time, but I do price compare viciously and there are quite a few things I refuse to buy unless they're on sale.  Great recipe, one of my favorite special dishes.
