Making lavender jelly from flowers harvested from my garden and serving it at my dinner table was a delightful experience. Three years ago, my husband and I gutted the backyard of our 1960's home, whose yard had been neglected for 15 years or more. So in rebuilding our yard, I planted numerous flowering bushes and shrubs that would attract birds, bees and butterflies.
I planted 4 Lavender bushes because the smell of blooming lavender flowers is heavenly.
Little did I know that I would be harvesting and drying the many blooms produced by these plants. Once I separated the dried blooms from the stems, I determined that I had almost a pound of dried flowers!
I am a member of the Daughters of the British Empire in Colorado and we are preparing for our annual fundraiser in October. The theme this year is "Lavender and Lace," and boy, did I have the lavender. I thought about making sweet-smeeling sachets, but I wanted to create something more unusual.
I came across a recipe for Lavender Jelly which seemed intriguing. So last Sunday, I steeped the flowers in boiling water and proceeded to make my first batch of jelly. TThe result was the most beautiful light pink concoction with the most amazing taste and smell.
So unusual but so delicious, I hope to make a lot of jars to help raise money for our charities. And, of course, I will have plenty for my own pantry.
