Easy Chicken Cacciatore Bake

1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
2 cups quartered zucchini slices
4 boneless skinless chicken breast halves (1-1/4 lb.)
1/3 cup SHAKE 'N BAKE Original Chicken Seasoned Coating Mix
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
1-1/2 cups penne pasta, cooked, drained

PREHEAT oven to 375°F. Toss tomatoes with zucchini in 13x9-inch baking dish.
MEASURE 1/3 cup coating mix; place in plastic bag. Coat chicken as directed on package. Place chicken over tomato mixture; sprinkle with Parmesan cheese.
BAKE 30 to 35 minutes or until chicken is cooked through. Serve over pasta.

For a quick burst of flavor, sprinkle unused SHAKE 'N BAKE Coating Mix over hot cooked vegetables or salads.

Substitute
Substitute 1 can (14-1/2 oz.) diced tomatoes and 1 tsp. dried oregano leaves for the Italian seasoned diced tomatoes.

Delicious and so simple -- this has become a favorite in my home. I did not have penne noodles this last time, so substituted whole wheat rotini; also used 1 yellow/summer squash and 1 zucchini. My hubby has requested this a few times already!! Thanks, Kraft. :)

These look awesome.  The diced tomato cans have so many flavors now you could really mix it up a bit also.  Who would've guessed it's Shake & Bake.
