Cold Weather Calls For Hot Soup

Nothing beats a cold day like a hot bowl of homemade soup.  And, since it is that time of year again, I dug out an old favorite of mine...Taco Soup.  This recipe is simple and very good!

Taco Soup
---------------------------------------------
1 lb ground chuck (hamburger works) browned
1 pkg taco spices
1 can of corn
1 can of mexican diced tomatos
1 can dark red kidney beans
1 16oz jar of hot salsa
1 medium onion, chopped.

1. In a skillet, brown your burger and saute your onions.

2. Once done, dump this and everything else (juice and all) into a large pot and bring to a boil. ***

3. Once boiling, turn down heat and simmer covered for roughly 30 mins.

And, thats it!  Serve your soup with a dollop of sour cream, some shredded cheddar cheese, tortilla chips, and Corona.

*** Note -- This can also be combined in a crock pot and left to cook on high for an entire day.  The effect is basically the same.  But, it will have a slightly better flavor thanks to the longer cooking time.

Only in the non-summer months. ;-) During the late spring to early fall, we get near 100.

Penny....it is awesome stuff. Works well with just about any meat...even tofu. If you can find the tofu chorizo, that works awesome. ;-)
