What Do You Do With That Leftover Turkey?

The day was grand...all the family ate all they wanted and got out of there.

You were left with a kitchen that looked like a war zone. You laugh now... but you had earlier been pondering whether you had baked a large enough turkey. God forbid that you run out of turkey while the relatives are filling their plates!

What is left as your tired eyes survey the carnage, is loads of turkey meat left in the platter.

Your stomach is probably telling you that it can't take any more suffering. I know my belly felt like a balloon last night and I wondered if I would ever be hungry again for turkey and all the trimmings!

Now it's a new day and I have white turkey meat in a Ziploc bag just waiting for what is next. How about some breakfast?

Turkey BreakfastTurkey Breakfast: Chop up leftover turkey, stuffing and mashed potatoes and form into a pattie. Add a bit of oil in a cast-iron skillet and fry until brown. Serve with a poached egg on top. 

Turkey Hash: This is one my Mom would make.  Heat a tablespoon of oil in a pan and add diced onions, red pepper and celery saulte for 5 minutes. Add 2 cans chicken broth, Add diced turkey, carrots, peas and potatoes. A bit of diced garlic is optional. Salt and pepper to taste.

Turkey Stock for Soups:

turkey bones
1 quartered onion
2 carrots
2 celery stalks
parsley
2 bay leaves
10 peppercorns

Add all in large pot. Cover with cold water and bring to the boil. Skim the surface and simmer for 2-3 hours. Strain and cool. Divide into small plastic containers to freeze for later. 

All this writing has made me hungry. Time to go fix my breakfast and enjoy my second cup of java.

Turkey hash is good.  With cold weather coming the turkey stock always comes in handy.  We have lots of turkey left to make many more meals.

We hope that he (or she, depends upon the year) sobers up and leaves early. But if you mean the food, throw it in a frying pan with the left over mashed potatoes, dressing and gravy, heat and serve.

That may not be a problem this year. We had a small turkey and lots of people showed up. Stock may be in order.

That Turkey Patty sounds good.  I may just have to try that tomorrow.

I've had a lot of turkey leftovers in various and sundry recipes but hadn't heard of the turkey patty with egg.

Breakfast, lunch and dinner were all leftovers from yesterday.  The snack later tonight will also be leftovers.  Now that the boys are getting older and bigger the leftovers are disappearing much quicker. Will be gone by lunch tomorrow.

Lizette: Liz and I are having a friend over for Turkey Chili tonight. He has the chili base made in the slow cooker, and we will add the turkey, and social hour will give it enough time to meld together:) Liz's fabulous pumpkin pie for dessert!
