Lemon Meringue Pie Kitchen Disaster Almost

 It was my husband's birthday and he likes to have lemon pie instead if happy birthday cake. 

The crust turned out perfectly.  Usually is shrivels down into the pan.  The lemon filling was pretty tasteless so I added a bit more lemon juice and rind, some lime juice and rind until it had a bit of a lemony taste.  On went the fluffy meringue and into the oven with the pie.  I shut the oven door and OMG there is the ½ cup of lemon juice that I forgot to add to the filling.  

I scraped off the meringue, and poured the filling back into the pot.  The crust slipped out of the pie pan and into to pot of filling breaking of a large chunk.  I fit the crust back in the pan with the pieces that broke off.  Added the lemon to the filling, refilled the pie and added the meringue that wasn't quite as fluffy as before and browned it in the oven.

 All turned out well, thank goodness because we were having company for dinner.  The moral of the story, if it doesn't taste like it should, maybe you forgot to add something, or just pay attention.

that is so funny.   Haven't we all had those moments?    My husband has FORBID me to cook when I am working because I "forget" I am cooking.  I have burned three 2 quart pots dry before I realized I was "cooking" (the burning smell was wafting back to the office).  That is when he had a CAT and told me I was NOT allowed to cook when I was working.
