Christmas Morning Quiche is on our menu!!

Preheat oven to 400

Ingredients:

3/4 bag frozen stringy hashbrowns
3 oz chicken broth
2 T olive or canola oil
1/2 small onion
Lemon Pepper
2 cups mexican shredded cheese
1 hot and 1 regular 12 oz sausage tube (recommended: Jimmy Dean brand)
1 10 oz frozen spinach OR 1/2 frozen bag broccoli florets
10 eggs

Line large casserole dish with hashbrowns; Sprinkle with chicken broth; Sprinkle with lemon pepper and 1 cup cheese; In large frying pan: Fry finely chopped onions in olive oil until lightly browned; Add sausage and cook until browned; Add chopped spinach or broccoli and simmer for 10-15 minutes; drain juice.  Add sausage mixture to top of hashbrowns then top with the rest of the cheese.  Beat the ten eggs and pour evenly over the top of dish.  Bake at 400 for 50 minutes.  Uncover the lst 10-15 minutes.

got to love quiche, I always do the fritatta (man thing) its the same as a quiche just not pastry,  plus for us manly men (hahaha) its a better name...... lol
