Holy Guacamole, Batman!

My husband is QUITE the guacamole snob.  We have often had to re-train wait staff at Mexican restaurants who bring out a couple of avocados, skin them, squish them together and call it "guacamole".  My husband would only eat my mother-in-law's recipe for years.  So, I got the recipe from her.  In her wisdom, she told me that, when it comes to a recipe, you "take the basic recipe and add/subtract to your taste to make it your own".  My husband has since decided that he likes my recipe better (although, he would NEVER admit that to his mother).  In that vein, I present my famous guacamole recipe.  Again, take this recipe and add/subtract what you wish to your taste specifications and make it your own.

guacamoleIngredients:
4 avocados
1 packet of guacamole seasoning
4 oz sour cream
1/2 cup fresh salsa
1/2 cup white onions
1 lemon or lime
Garlic salt (to taste)

Mix all ingredients except the lemon or lime together using a potato masher (easier on the hands).  Cut the lemon or lime into quarters and squeeze the juice over the top of the guacamole.  Cover the bowl with saran wrap, making sure the the saran wrap lays directly on top of the guacamole mixture to keep as much air out as possible (discouraging the yucky brown color that comes with oxidation) and place in the fridge until you simply cannot stand it and you just HAVE to eat it now!  The longer it marinates, the better the flavor is.  When ready to serve, stir the guacamole again and add a touch more juice if you wish.  Now's a great time to do one last taste test, too.

Tips:
The avocados should be ripe, which means soft to the touch, but not too soft.  If you buy them before they are ripe (when they are hard), put them in a paper bag on top of your refrigerator for a day or two to ripen them.  I prefer using McCormicks guacamole seasoning mix.  I believe the package says to use 2 avocados per packet, but 1 packet per 4 avocados makes it so that it is not too salty.

When testing how the mixture tastes, make sure to use a chip.  Remember, tortilla chips have plenty of salt on them.  You don't want your guacamole to be too salty.

Love avocados with a little salt & pepper and splash of Italian dressing or as guacamole. I've got 3 sitting on the counter and two more in a paper bag on top of the frig and can't wait to give your recipe a try!

Looks yummy, Heather.  I like guacamole but have never made it myself.  You are so right about being picky with guacmole.  Some are good, some are better and some are let just say I don't bother.

In PA, especially where I live it is hard to find a good Mexican restaurant that is not a chain and we have very few of them.  So far Texas has my vote for the best Mexican restaurants, but I would love to invite myself to your house for a Mexican dinner w/guacamole.  LOL

I've always said I didn't like guacmole. Every time I have tasted it it just seemed like some bland green puree. Maybe it's because it hasn't been your recipe. LOL

Hi Heather - I just made some guacamole the other night.  Very simple with garlic salt, a touch of mayo and avocados (of course).  My husband said it was the best he's had in a long time.  It reminded him of how he used to get it at home.  His Mom was a great cook - Mexican or otherwise.

I love guacamole and I am always looking for new recipes to change it up. Being a vegetarian I find myself eating a great amount of hummus and guacamole with most meals so it is nice to change the flavors up some. Thank you for sharing your recipe and I am looking forward to making this soon.
