June 11, 2011. I posted the blog below several months ago but the other day a I was asked for a recipe for fish n chips. I figured I'd repost my "Oregon Inspired" twist on Fish n chips again.
So last week I mentioned that I love to cook and posted a salmon dish I recently made.
The other night I was inspired to make fish 'n chips...but I wanted to "Oregonian" them, a bit. Here in Southern Oregon we're known for pear orchards (sadly, many of the orchards have been removed) and we've got an award winning cheese factory Rogue Creamery, here in Central Point, where I live on the outskirts of and there are a number of surrounding area micro breweries.
So, I thought what better way to to incorporate some local traditions into a typical Fish 'n chip dish.
So, I made a beer batter using an Oregon area Pale Ale, Deschutes Brewery Mirror Pond Pale Ale. Alaskan cod was my fish of choice. For the "chips" instead of deep frying anything, I cut up red potatoes and oven roasted them in olive oil, garlic powder and some parsley. The typical "slaw" got a Southern Oregon twist. Chopped romaine hearts and chopped cabbage with chopped local pear, some chopped pecans, and Rogue Creamery blue cheese crumbles..all tossed with a light vinegarette. Figured since I was mixing things up a bit...the tarter sauce couldn't be the typical stuff with pickles. Instead, mayo, some horseradish and balsamic vinegar and a touch of parsley.
