First, you need to understand that Thai food is my favorite food on the planet. But only if it's cooked well. Honestly, I have only been to 2 Thai restaurants, ever, that are worth eating at. (Guess I need to go to Thailand...) One is in the Hawthorne district of Portland, Oregon. The other one is Wild Ginger, here in Colorado Springs, Colorado.
Wild Ginger is a family owned and operated. Thailand is known for their friendly people, and that friendliness can be fully experienced at this restaurant. They are always there to greet us, by first name, and let us sit wherever we would like. When we bring our kids, we choose one of the oversized booths, but when it is just Derek and I, we usually choose a window seat, where we can watch the activity on West Colorado Avenue, as we enjoy our meal.
We usually start off our meal with a Thai Iced Tea, a bright orange sweet drink packed full of caffeine and yummy-ness, and comes to us in a HUGE glass. They also offer a great selection of beer and soft drinks.
When we are really hungry, we may order a wonton soup to start. This soup is full of flavor, yet still leaves plenty of room for the main course. The menu offers something for any hunger, diet or eating preference, including a pretty extensive vegetarian selection.
We have been eating at Wild Ginger since it opened in the mid-late 1990's. At that time, we were vegetarian, and we found our favorite menu item to come from the vegetarian menu. To this day (we are not vegetarian any longer...), we have found that it is still one of our favorites:
Pad Phed Tofu - ½ inch blocks of tofu stir fried with a variety of vegetables and special homemade Thai sauce in a choice of "hotness" - Actually, this is exactly how we order it: Pad Phed Tofu, no MSG, add eggplant and basil, medium hotness.
See, since everything they make is from scratch, they can modify it to your liking - even omitting the MSG (which gives me a headache).
Other menu items that we have loved include delicious dishes with seafood, chicken and other meats.
We used to live on the west side of town, close to Wild Ginger, but have since moved to the eastern part - about 30 minutes from Wild Ginger. But, based on the nature of our business, we find ourselves on the Westside quite often. And when we do, we always call ahead and order ... pick it up ... drive home and ENJOY!
