I don't know about you but I absolutely love egg nog, and not just at Christmas time. My girlfriend shared a recipe with me and I changed it a little to suit my taste so I'm sharing it with you.
Egg Nog Bread
3 c. flour
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground nutmeg
1 beaten egg
1 3/4 c. egg nog
1/2 c. cooking oil
1 c. chopped pecans
1/2 c. powdered sugar
2 or 3 tsp. egg nog
Preheat oven to 350 degrees.
Mix flour, sugar, baking powder, salt and nutmeg. Combine egg, eggnog and oil. Add to dry ingredients. Stir in nuts. Turn into 4 x 5 x 3 inch greased loaf pan. Bake at 350 degrees for 60 to 70 minutes. Cover with foil after 30 minutes if it browns too fast.
Cool in pan 10 minutes. Remove bread from pan. Cool on wire rack. Wrap bread, store overnight. To serve, stir together powdered sugar and enough egg nog to drizzle consistency. Drizzle over bread (16 servings). Makes a great Christmas time (anytime) bread.
