I know it's just "teasing weather" here in Northern Ohio. It's kind of like the "teaser rates" some lenders offer to get you in the door. They make you want it and believe you can have it and then rip the rug right out from under you.
I don't care. It's 50 degrees today and I'm feeling like Spring is here. Next week's forcast is for highs in the 30's, but like I said before...I don't care. I'm enjoying being outdoors with just a jacket and no gloves or scarf. Why...I might just burst into song...NOT
I'm going to celebrate by having one of my favorite Spring/Summer Salads. There are just 5 ingredients, it's different, delicious and GOOD FOR YOU.

Avocado Salad for 4
3 ripe avacados (one squeeze short of guacamole softness)
1/2-3/4 small red onion sliced
2-3 of the best ripe tomatoes you can find cut up
S&P to taste
Cut the avocado in half and remove the pit. I score the avocado while still in the shell with a sharp knife into chunks and then release them into a bowl with a large salad spoon
Add sliced onion (my pic shows sweet onion because I didn't have any red. Much prettier with red onion)
Add cut up tomatoes.
Drizzle with olive oil (1-2 tsp)
Squeeze the juice of 1/2 lemon over top
S&P to taste
Let is sit for 30 minutes or so covered in the frig to blend the flavors.
