La Sandia is in Park Meadows amongst that group of great restaurants located outside of the mall on the west side. The front range views from the upper deck stretch from Pikes Peak to Long's Peak and are stunning, Jojo and I live in Castle Rock and have found this is a great halfway place to meet Denver friends and ponder this rather remarkable state we live in.
Though we usually prefer smaller local establishments, the menu and service here has always been terrific. Jesse Slaughter, the manager, and his staff are energetic and when asked seem to enjoy talking about the success their organization, Richard Sandoval Restaurants, is enjoying world wide. Their restaurant locations now include New York, Dubai, Puerto Vallarta and we hear London is on the way.
Richard Sandoval himself is a Mexican born chef who formerly played tennis for the University of New Mexico. Sensing he wasn't going to break into the top professional ranks he went into building his chain. He has developed a light and fresh style of "modern Mexican cuisine" that is popular around the world.
Presently, The Bottomless Quacamole, which has always been prepared at the table when we ordered it, is only $3 Monday thru Fri from 4 to 7 and the $3 tacos are a big hit.
The $3 Mexican beers are a deal but I really like their Margaritas. I recommend the Prickly Pear-Blueberry Margarita, a very distinctive summer type drink .Happy Houris every night 4PM to close. Don't forget 2 Dollar Tuesdays, Tacos are $2 as is the Tecate beer.
