It's apple picking time in New England! Particularly on the Seacoast of New Hampshire, which means it's also time for your favorite apple recipes. I hope you enjoy my first of many "Recipes of the Month". And, my September 2007 choice is...
Butterscotch Apple Crumb Dessert
1 cup uncooked quick-cooking oats
1/2 cup chopped pecans
1/2 cup softened butter
1/4 cup all-purpose flour
1/4 cup firmly packed brown sugar
1-3 5/8 oz package butterscotch flavored pudding & pie filling mix (or you could use vanilla if you prefer)
1 teaspoon ground cinnamon
6-8 medium cooking apples, peeled and sliced 1/8-inch (approximately 6 cups)
Heat oven to 375°F. Combine all ingredients except apples in large bowl. Mix all at medium speed, scraping bowl frequently until the mixture resembles coarse crumbs.
Add in the apples and 1/2 cup crumb mixture in greased 2-quart round casserole. Sprinkle with remaining crumb mixture. Bake for 35 to 40 minutes or until apples are fork tender.
Serve warm with ice cream, if the mood strikes you! And, then...ENJOY!!
If your looking for a place to pick those apples, you might try the following local orchards AppleCrest Farm in Hampton Falls, NH or Demeritt Hill Farm in Lee, NH.
As always, if you know of someone looking to buy or sell real estate in Portsmouth, Dover, Stratham or Hampton or anywhere on the New Hampshire Seacoast, please look me up on line at www.SeacoastHomesForYou.com and I'd be happy to help!
