Recipe of the Month - Butterscotch Apple Crumb Dessert

It's apple picking time in New England!  Particularly on the Seacoast of New Hampshire, which means it's also time for your favorite apple recipes.  I hope you enjoy my first of many "Recipes of the Month".  And, my September 2007 choice is...

Butterscotch Apple Crumb Dessert

1 cup uncooked quick-cooking oats

1/2 cup chopped pecans

1/2 cup softened butter

1/4 cup all-purpose flour

1/4 cup firmly packed brown sugar

1-3 5/8 oz package butterscotch flavored pudding & pie filling mix (or you could use vanilla if you prefer)

1 teaspoon ground cinnamon

6-8 medium cooking apples, peeled and sliced 1/8-inch (approximately 6 cups)

Heat oven to 375°F. Combine all ingredients except apples in large bowl. Mix all at medium speed, scraping bowl frequently until the mixture resembles coarse crumbs. 

Add in the apples and 1/2 cup crumb mixture in greased 2-quart round casserole. Sprinkle with remaining crumb mixture. Bake for 35 to 40 minutes or until apples are fork tender.

Serve warm with ice cream, if the mood strikes you!  And, then...ENJOY!!

Thanks Candy!  I thought this recipe would be a great way to highlight apple picking season in New England.  There are several orchards around his area were folks can go and pick their own apples.  This is just one of the many things you can do with them!  Have a great weekend!!

I'll assume this is a fat free .. sugar free recipe.....  All you have to do is agree with me....   I wont yell when i get on the scale... well not that you'll hear... thanks for sharing, sounds wonderful

Fat free and sugar free...I don't think so! :)  Althougth I'm sure you could substitute some ingredients to make it less yummy but why would you want to do that?!  Thansk for posting!!

Sue, Thanks for the recipe...sounds delicious.  Butterscotch is one of my favorites.  Will give this recipe a try.

Your recipe makes me thing of my grandfather (deceased) who loved butterscotch.  I think I'll make the dessert in memory of him this weekend.  It sounds yummy!

The recipe actually reminded me of a horse I used to own back when I was a kid.  His name was Butterscotch Sundae.  Loved that horse.  I'm sure he too has moved on to greener pastures.  Thanks for posting and enjoy!!
