WONDERFUL WEDNESDAY WITH ASPARAGUS - Part 2

Did you know that, under ideal conditions, an asparagus spear can grow 10" in a 24-hour period?   This is one amazing plant/vegetable/lily :0)



 One of my other fave vegetables pairs beautifully with fresh asparagus: Avocado



Crispy and creamy, sweet and tangy, this salad will surprise you with its full flavour. Experiment with whatever fresh herbs you have on hand for a new treat each time - You can't go wrong!



 Avocado and Asparagus Salad



 Ingredients:



 2 pounds asparagus, thick ends removed, cut into 2-inch pieces

  2 medium avocados, peeled, pitted, and sliced, diced, however you like!

  1 lemon, zested and juiced

  2 tablespoons olive oil

  2 tablespoons chopped fresh parsley

  1 tablespoon chopped fresh cilantro

  1 tablespoon chopped fresh mint

  1 tablespoon white wine vinegar

  ½ tablespoon balsamic vinegar

  1 teaspoon sugar

  ¼ teaspoon salt

  ¼ teaspoon black pepper



 Bring a large pot of salted water to a boil.

  Add asparagus and cook until bright green, 2 to 3 minutes.

  Remove, rinse under cold water, and drain.



 Combine asparagus, avocados, lemon juice, and lemon zest in a large bowl; toss gently to coat.



 In a small bowl, whisk together oil, parsley, cilantro, mint, vinegars, sugar, salt, and pepper.



 Pour over asparagus mixture and toss gently to coat.



 Serve immediately or you can chill it for approx. 2 hours if you like.



 I like to serve this with a nice grilled tuna or swordfish steak - YUM!

Lydie -  in my humble opinion, the mint just gives your taste buds a little surprise with all the other gorgeous flavours.  I grow it on my window sill all winter so I include it.  I don't think it is absolutely crucial if you don't have it on hand though.  Maybe you could put in an extra bit of cilantro and switch lemon for limes?  That would work too.  Good luck!

Susan....both your post on 'asparagus are true spring [or anytime] presentations;  we have it a lot and I like the thin, 'New' spears.  Sal is not too into this, but so far he has learned to eat that 'purple-clothed' veggie & both the 'green-tree-like' ones as well.  Great eating and can be oh so low in calorie count as well [depending] The tuna, swordfish , and salmon steaks are a great addition.  Have a great rest of the week.

OK Susan my friend it only took two days. LOL Are you happy you have a new recruit. Smiling. I love avocados and probably the tips are more tender than the stalks. I will leave out the pepper though. I will have to give this a try. I am not a fancy cook with spices and such because of a tempermental tummy. I will try that other one without the garlic because Mom does like fresh asparagus. Thank you my friend. Now don't try to sell me on succotash or pinto beans or any other kind of bean though. smiling

Shannon -  you are soooo Irish.  It was a struggle to get my husband to eat vegetables too but I hung in there.  He doesn't love them but he will endure them to avoid SCURVY!!!
