Shortcake with Fresh Berry Sauce and Lavender Whipped Cream!

Yeah it is a holiday weekend and my guys are coming home.  While I am really excited, I do get a little nervous about what to feed these dudes!  I know too much about food and what is in it to be comfortable feeding them just anything but....I don't want to have them go hungry or eat stuff that they hate.  Oh the healthy food mother's dilemma.  So I have been pouring over ideas for the last few days.  I have decided that I will take standards and "health-them-up"!  Bobby Flay has some awesome burger recipes in his book Burgers, Shakes and Fries - so I have decided a good organic California burger with homemade organic fries and a banana, almond butter, almond milk shake should do the trick.  Tomorrow we go into the city and I have some organic restaurants lined up and then off to my Mom's house on Sunday for dinner. 

I would love to hear what healthy foods you eat when you have large family gatherings.  It is a time of real challenge for those of us that really watch what we eat.  It is hard enough to watch the ones we love eat food that is just plain 'ol bad but to eat it ourselves is impossible.

Here is a great dessert recipe for your holiday dinner!

Shortcakes with Fresh Berry Sauce and Lavender Whipped Cream!

1/2 Cup of Honey

2 eggs

1/2 cup of raw almonds

1 T of lavender buds

2 cups of organic, non-bleached white flour

1 T baking powder

Pinch of salt

5 T cold unsalted butter cut into 1/4 inch pieces plus 1 T unsalted butter, melted

Preheat oven to 375.  Place parchment paper on a baking sheet.  Whisk together the honey and eggs in a small bowl and set aside.  Place almonds, lavender, flour baking powder and salt ina food processor and grind to a coarse powder.  Add the cold butter and pulse for 15 seconds.  Transfer to a bowl and our the egg mixture over the top.  mix just until the dough comes together and refrigerate for 10 minutes.  Pack the dough to just below the top of a 1/3-cup measuring cup, then invert and tap out onto a baking sheet.  Make 8 total biscuits.  Brush the discs with the melted butter and bake for 15 minutes.  Rotate the pan and bake until the biscuits are golden on top, about 5 minutes more,  Transfer to a wire rack and let cool

Berry Sauce

2 cups of organic fresh berries, stemmed and coarsely chopped

2 T of maple syrup

1 T balsamic vinegar

1/2 t vanilla extract

8 grinds of pepper

Combine all the ingredients in the bowl of a food processor and pulse about 10 times.  Chill for 30 minutes before serving to the flavors can marry.  Use sauce withing 24 hours.

Lavender Whipped Cream

2 cups of organic heavy cream

1 T of lavender buds

2 T honey

Pour cream into a bowl and add lavender and refrigerate overnight!

Strain cream. Whip cream and while whipping slowly add honey.  Whip till stiff peaks.

To assemble:

Cut biscuit spoon sauce over bottom half, top with whipped cream, place top of biscuit on top of whipped cream and top with another layer of each!
