Fish Taco’s
I love Mexican food, but sometimes I get a little bored with the same old fillings. Plus…I am always trying to incorporate more fish into my diet. So, I came up with a quick and easy Fish Taco recipe. I hope you enjoy!
Ingredients:
2-3lbs Boneless White Flaky Fish (I use Swai Fillet)
Taco seasoning packet
1 can of Rotel
Mexican Rice
Corn Salsa
Shredded Lettuce
Sour Cream
Shredded Cheese
Hard or soft Taco shells
Bake the fish until flaky (350 degrees x 20-30 min~approximately). Cook the Mexican rice per package directions. Mix the Taco seasoning packet with the Rotel…don’t add water (like the seasoning packet says). Once the fish is flaky and the rice is cooked, add it to the Rotel/Seasoning packet mixture. Heat on medium high for 15 minutes. Let it stand for 5 minutes. Serve in hard or soft taco shells with salsa, lettuce, sour cream and cheese.
Tada…enjoy! I enjoy mine with a nice cold DosXX or a mojito!
