I was reading Richie's post and I got carried away by his narrative, and I imagined the process every step of the way, and was enjoying it just from imagining.
how often we put the cooking (or whatever we do) ahead of people. We got edible results and we are fine. But aren't we missing on enjoyable results, on pleasures that we do not even know about?
Wonderful post. It takes you from mundane cooking to the art of love...
One of the delicacies in Europe, Asia and especially in the Middle East are roasted nuts. If you go back 2000 years, roasting nuts back then was a gift of love because of the time and sacrifice involved. Let me explain. You see nuts were roasted over an open flame and fire and required constant mixing so that they roasted evenly
THE SIMPLE REWARDS IN LIFE
Whoever went to the trouble to either go get them, (shelled or not shelled) then had to either perform the task of roasting or outsource it to the most patient, qualified nut roaster in the tribe. Whoever did it, knew that more than nuts were at stake. You see people spend the night eating nuts and talking around campfires. A good batch of nuts promotes great conversation
NOW, IT BECOMES INTIMATE
The product is soaked in water to slow down the cooking process. You may also add salt to taste or other spices. The soaking helps to promote a short period of steaming that affects and protects the inner sanctum of the nut...the nucleus as it is being brought to flavor. Be advised that no two centers or nuts are the same.
HANDS ON ALL THE WAY
Constant supervision of the product is required anywhere from 1-2 hours never leaving the fire pit while mixing or churning the nuts every 3 minutes or so. No bath room breaks, no delegating the task once it is started is allowed. You see the one who is doing the roasting becomes "one" with the batch. Very important
IT CAN BECOME MYSTICAL IF YOU DO IT RIGHT
Feeling it, smelling it, watching it, constantly tasting it and mixing it. After every mix, you take a sample from the four corners of the pan so as to verify that every nut is getting fair heat. The nuts speak if you listen. You can add water to slow down the cooking process. The nut has to willingly agree to be roasted and not forced. All of sudden, your gut starts speaking
THE LAND OF MILK AND HONEY NUTS
Just before you reach the promised point of the nut being perfectly roasted on the outside, but not injured on the inside, you remove the nuts from the fire and instantly begin the cooling process. You see the nuts are still cooking inside even though they have been removed from the heat source. The product is now going to touch down on earth...
YOU HAVE NO IDEA WHAT YOU ARE MISSING
The end result is something that many Americans have never experienced before. Do not even think to compare these with nuts from conventional sources. Many of the fine roasters that sell to the finicky public never roast nuts to perfection. Only to the point where they have been slightly cooked. You lose
I...AM THAT MAN
I have mastered the art of cooking Filberts, Pine Nuts, Almonds, Pecans and Sunflower seeds that will have you in a state of ecstasy, joy, and contentment...at no extra charge. I am am just given people what they should be getting and have missed. This quickly becomes a must have
TAKE TWO NUTS...CALL ME IN THE MORNING
My wife will sing and hum as she eats these...I have have guests that apologized for eating all that I put out. When I tell them I have another two pounds and I will be right back, no one has ever said to me....DONT' BOTHER. In the morning,I leave out a generous amount and it is gone before sundown. I give them as gifts and people follow me around making light conversation until they can bring up the subject... Need I say more?
