Memorial Day Sunday Dinner

It was 89 degrees outside, but the sun has gone down.  We just had our Memorial Day Sunday dinner here at home, with my daughter and her husband... barbecued steak, baked potatoes, corn on the cob, and fruit salad.  Not a feast, but it was close to it.  It's the only time when hubby will fix something resembling cooking... and it has to be on either Memorial Day weekend, or Veterans Day, or July 4th holiday.  But before you get the wrong idea, he barbecued the steak only, he didn't fix anything else!

I have a very simple and quick fix fruit salad recipe that you might want to try for tomorrow:

2 cans (15 oz) of Chunky Fruit Cocktail, drained

8 oz Cream Cheese with Pineapple, or if you don't have it use 1/2 a tub (4 oz) of Whipped Cream

1/2 jar (6 oz) of Coconut sport (in the Oriental food section)

Drain the fruit cocktail, mix it with the coconut sport, and fold in cream cheese/whipped cream.  That's it!

It's good for six people.

Now if you want more punch to it, add chopped walnuts unless you don't have it.  Or add drained Mandarin oranges, unless you don't have it. Or add one cubed Granny Smith apple, unless you don't have it.

If you have all of the above, mix them in, but it won't be simple and easy any more.  :)

I can't believe I'm blogging a recipe. LOL

Ceil loves anything that has the word coconut so I'll have to pass this on to her. Wish I had some of that right now, I get hungary about this time every night. That would make a nice snack.

89 in Illinois? I didn't know it got that hot up there. And then during the winter you have to put up with snow, ice, and freezing temperatures? What a wild temperature swing.

Yes, Eric. Our average temp in the summer is 89 degrees, highest recorded was 104 in 1988, lowest was -28 in 1996 (five years after we moved here.)  And lest we forget we have tornadoes which are especially bad this year. :(
