The Heat is On! Break Out the Salads!

As many of you know, my sister, Dana and I have teamed together to create what we think is a great website for foodies.  Dana is a culinary genius and I love to eat.  So, we're a perfect team! 

We recently did a blog post for Memorial Day and added some really great salad recipes.  Here's one of them!

 

Get your Greek on with this delicious pasta salad…  

  1. 1 16 oz. box Bow Tie Pasta, cooked al dente
  2. 2 Cucumbers, scored, seeded and sliced
  3. 1 yellow Bell Pepper, julienne
  4. 1 small Red Onion, julienne
  5. 1 10 oz. bag of Baby Spinach
  6. 1 8 oz. Feta Cheese, cubed
  7. 4 oz. Pine Nuts, toasted
  8. 1 16 oz. Greek Vinaigrette
  1. Cook pasta, according to directions. Rinse and set aside.
  2. Toast pine nuts on baking sheet, in 350* oven, for approximately 5-8 minutes. Let cool.
  3. Add cucumber, yellow bell pepper and red onion along with Greek vinaigrette.
  4. Stir until well blended.
  5. Fold in spinach, feta cheese and pine nuts.
  6. Reserve 2 tbl. feta cheese for garnish.
  7. Chill 15 minutes before serving.

You may only need 10-12 oz. of Greek Vinaigrette.  It’s up to you!!

Pam, Sounds delicious.  A friend of ours has a similar recipe.  She uses orzo instead of the bowtie pasta.  The flavor combinations are so summery!

Hi Susan - I discovered Orzo several months ago and am hooked on it.  I have an Orzo recipe that I make often that is much like this one.  Your friend has a great idea.
