Here's a great salad idea, perfect for these warm summer evenings. I called it my Baja Salmon Salad. Very easy and simple!
What you'll need:
Salmon Fillets
Chopped Lettuce of choice
Corn Tortillas cut into thin strips
Canned Black Beans
Shredded Cheddar or Monterey Jack Cheese
Packaged Taco Seasoning
Salsa or Pico d' Gallo
Sour Cream
Lime
Chopped green onion
Chopped Cilantro
Start by taking several corn tortillas out of the package. Cut them in half and place one half on top of the other half. Next cut them crosswise into very thin strips. Heat some vegetable oil in a skillet. Put the tortilla strips in and cook them until nice and crunchy. Remove and drain on paper towels then season with sea salt.
For the salad, just chop up your lettuce of choice. I used romaine. Drain and rinse the black beans and scatter on the lettuce. Next put on some shredded cheese, followed by the tortilla strips and some chopped green onion.
For the salmon, I just sprinkled on some packaged taco seasoning onto the top of each one, then squirted each with some lime juice. I pan fried them to sear the outside and cooked really for about 6 minutes or so, just until medium rare (I like salmon a little on the medium rare side, but cook to your preference) When the salmon is done, remove from skillet and set aside for just a minute or two. Plate the salmon on top of your salad mixture, then add a dollop of sour cream and some salsa to the dish and top all with some chopped cilantro and a garnish of additional lime slices.
A wonderful healthy cool and light summer salad.
