 Corralitos Market

Corralitos Market

This is a favorite in our home and very easy to make.  Even the finicky 12 year olds love it!!   This made a nice pot of chicken/corralitos market andouille gumbo with enough for luch the next day or dinner a  second night.

Ingredients

1 pound boneless skinless chicken breasts, cut into bite size pieces
1 (10 ounce) package frozen okra, thawed
3 links of Corralitos Market Andouille Sausage- diced
1 cup chopped yellow onion
2 celery stalks, chopped
1 green bell pepper, seeded and chopped
1 jalepeno, finely chopped for just a little extra spice
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon salt
2 bay leaves
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder
1/4 teaspoon cayenne pepper (I like a little more)
1/2 teaspoon ground black pepper
3 cups chicken broth
3 cups tomato juice
4 cups rice (so you have leftovers for the next day)

Very Easy Directions

In a slow-cooker, combine all ingredients except for the rice.  Mix well.  Cover and cook on high for 3-4 hours, or low for 6-8 hours.  Serve over rice.

Sound so yummy! My kind of cooking: one-pot, toss all the ingredients, and go!

Love gumbo! Will definitely try this. Thanks for posting!
