Stacey's Strawberry Bread.... Soooo Good!!

Yes, I know this isn't really real estate related, but it is still something I wanted to share with everyone in the rain... One thing I like to do is cook. I had a rough beginning, started several fires (nothing serious) burned myself a few times in the process, but eventually I got the hang of it and I have to say I am pretty good at it...

This recipe is actually my mom's recipe, I just revised it, made it healthier, and equally delicious, so you are getting my version.. :)

Stacey's Strawberry Bread:

3 cups Whole Wheat Flour
2 cups of Stevia
1 tsp baking soda
1/2 cup chopped pecans
1 Tbs cinnamon
4 eggs (beaten)
1 1/4 cup Applesauce
1 16oz package frozen strawberries thawed and undrained. (reserve 1 tbs strawberry syrup for the glaze.)

Sift together flour, sugar, baking soda and cinnamon and set it aside.
In a separate bowl, combine eggs and applesauce. Mix well.
Add the sifted ingredients to the egg and applesauce mixture. Mix well.
Add strawberries and pecans and blend till mixed.
Pour into two 9x5 or five 3x5 greased and floured loaf pans.
Bake for 50-60 minutes at 350 degrees. (20 minutes for the mini loaf pans.)
Do not overbake.
Pour glaze over warm loaves and turn out of the pan when cooled.

GLAZE:

Combine
1 cup Stevia
2 tbs lemon juice and
1 tbs reserved syrup from the strawberries
mix till smooth and pour over warm loaves

If you would like to make it using my mom's version just use all-purpose flour instead of whole wheat, use sugar instead of Stevia and use Vegtable Oil instead of Applesause.. Both versions are delicious.. One is just a bit healthier then the other... :)
