Timonium, MD  Farmer's Market - Something to do with Your Purchases - Patty Pan Squash

Wednesday is market day in Timonium, MD.  The Farmer's Market is held inside the main gate at Maryland State Fairgrounds.  I have been writing a regular blog blog  weekly about what to do with your purchases.  I had several requests for this to continue.  I decided to write it the day before so my readers could make a list before going to the market. 

Most people walk by these succulent morsels and leave them because they look weird and they don't know how to cook them.  Your vegetable side has never been so easy. 

 

Patty Pan Squash

Ingredients:

9 or 10 Patty Pan Squash

Fresh Basil - roughly chopped

1 Onion, sliced

1 clove of garlic, crushed and chopped

Olive Oil/Butter

salt and pepper

For a family of 4 or 5 you will want to get 9 or 10 small Patty Pan Squash that are evenly colored without blemishes.

Trim the top and tails off and slice into 1/4" slices.

I use a large cast iron frying pan and put about 1 tbsp of olive oil in a hot pan, add the onions, sprinkle a little salt and pepper on and stir.  Add the garlic and stir.  Cover and cook for 2 minutes.  Add the patty pan squash and stir, add the basil.  Cook for about 5 minutes and serve. 

I served this to my family.  I have 3 children (2 boys and a girl).  I served this with grilled chicken sausage, steamed mushroom rice.  There were no left over.

I am one who would have passed these by! I can't wait to try them!   I have asked the farmer's how to prepare some other veggies I had never used before.  They are always willing to share recipes and ideas! This is a great idea for a blog, well done!  I like that you chose to do it the day before, otherwise, folks might forget before the next market day!
