Maryland Perfect Peach Pie Recipe

 

Pastry for Nine Inch Pie  (from scratch or ready made)

5 cups peeled and sliced peaches (about 2 ½ lbs.)

1 tsp. lemon juice

½ cup sugar

¼ all-purpose  flour

¼ tsp. cinnamon

1 Tbsp. unsalted butter

 

Heat oven to 425 degrees.  Prepare pastry or use ready  made  crust such as Pillsbury.

Mix peaches and lemon juice. Stir together sugar, flour and cinnamon. Mix with the peaches.

Pour into pastry-lined pie pan. Dot with   butter.  Cover with full or lattice crust. Cover edge with 2-3 inch strip of aluminum foil to prevent excessive browning.

Remove foil last 15 minutes of baking.

Bake 35 to 45 minutes, or until crust is brown and filling begins to bubble. Serve warm or cold.

 

Dolores baked this pie using fresh Maryland peaches and it was wonderful.
