Tonight I have the pleasure of cooking dinner for some friends of ours. Every Tuesday evening we hook-up with two other couples, share a crust of bread, and just hang-out & relax. It's quickly become one of the highlights of our week!

 Dr. Dan is a local Family Practice Physician here in Silverdale WA. I could easily pass for his twin. When we first moved here, people kept coming up to me and started sharing their physical maladies. Then, about 2 or 3 minutes into the conversation, they'd realize, "Hey! You're not Dr. Dan!" His lovely wife, Debbie, is the consumate host, and has been fixing us dinners for the past several weeks. Tonight, I'm giving her a break.

Greg is the project manager for the Hood Canal Bridge Reconstruction efforts. He also coached my son Luke's Little League team a few years back. Their son, Cody, plays football on the Central Kitsap Junior High Varsity team. No doubt someday our two boys will be playing on the same team! His wife, Leah, has been good friends with my wife, and is one of the most loving and caring people I know.

So what's on the menu, you ask?

Well, for appetizers, I've got some of my own homemade smoked salmon (sorry Sardi, your's is coming!), served with Vermont Extra-Sharp Cheddar Cheese and Peppercorn Crackers.

Romaine Heart Salad with crumbled Parmesan & Croutons with a Sesame Ginger Dressing

A bowl of my world famous New England style Clam Chowder

Crabcakes made with Dungeness Crab I caught out on Hood Canal this past Summer.

Spicy Grilled Prawns

Roasted Asparagus with Lemon

Sticky Rice

And for dessert, my wife, Janice, baked some individual sized fresh Blackberry pies, with berries picked in our neighborhood. They'll be heated up and served ala mode.

Kris - I am SOOOO embarassed. I told the coordinator to double-check the invite list. Obviously a gross oversight. Your SPAM is welcome here any ole time! The best thing about my wife's blackberry pie is that she cooks them individually sized in small porcelin bowls. There is only crust on the top. The berries are simply mixed with some sugar, and they're baked. I can get more specifics if you like....

The meal was a smash hit! Things got a little hairy during the prep time, but fortunately, Greg showed up and did the grilling. Just a few crabcakes are left, so you best hurry up!

Good stuff Rich, and really going to enjoy taking advantage of it when that time comes. Excellent meal, and bet the crabcakes were moist, and to die for.

Just got back from the hospital in Reno where we delivered the message today. Was hopeful, and am comfortable that it came from the most supportive place possible. Guy was groggy, but receptive.

Cougar Gold is perhaps one of the finest Sharp Cheddars in the WORLD.
And it is made in Washington State.
By our very own Cougs. As in WSU Students!

It comes in a tin, and you can probably find it at a local specialty food shop. My favorite butcher carries it. Or you can order it direct from the WSU Creamery website: http://www.wsu.edu/creamery/

Or... my favorite... have a parent of a WSU student have their kid bring back a pallet. I think there are Coug parents who have made a cottage industry dealing Gold to their friends...

Sarah - made by students of WSU? Really? But it's gotta be REALLY sharp. There are sharp cheddars, and then there are SHARP cheddars. That's why I like the Tillamook Vintage White you can buy at Costco. But I'll go find Cougar Gold, now that you have my interests piqued...

This is sharper than Tillamook's Aged White. Very comparable. Perhaps a tad chalkier, and a bit more dense. But sharper, yes.
