Saucy Stuffed Green Peppers Recipe

Saucy Stuffed Peppers

Ingredients

  • 1 lb. Ground Beef
  • 2 tbl. long grain Rice
  • 2 tbl. Yellow Onion, minced
  • 1 tbl. each Celery Salt, Onion and Garlic Powder
  • 1 tea. Black Pepper
  • 4 large Green Bell Peppers, cut top off, halved and seeded
  • 1 tbl. Canola Oil
  • 1/2 qt. Vegetable Juice
  • 2 c. of Water,  as needed
  • 1 tbl. Beef Bouillon or Base
  • Salt and Pepper to taste
  • 4 Servings of Mashed Potatoes, homemade or box

Instructions

  1. Knead first 5 ingredients until well blended together. Separate into 8 servings. Stuff Bell Peppers with meat mixture.
  2. Heat oil in 2 qt. Pot over medium heat. Add stuffed peppers and carefully brown on both sides approx. 5 minutes on each side. (Keeping meat inside peppers.) Continue to heat stuffed peppers with pepper side down, add the last 4 ingredients. Simmer 20-30 minutes.  Sauce should be saucy and not too thick.
  3. Meantime, make your Mashed Potatoes.
  4. Serve Stuffed Peppers along side of Mashed Potatoes and ladle sauce over top of both.

I love stuffed bell peppers, but I don't make them very often.  I'll have to give this recipe a try, thanks for sharing.

Hi Erika - When I had 5 children at home and a full-time job outside my home, I used to spend some time on the weekends preparing "freezer meals".  Although I don't think Stuffed Peppers would freeze well (the pepper would probably turn to mush), you could make them ahead and serve them within the next few days.  Anyway, I hope you'll give them a try.
