The Best Texas Cream Cheese Pumpkin Pie Recipe
Yesterday I wrote a post about taking pumpkin pies to your past clients. I thought I would share my best pumpkin pie recipe with you, since it’s a really good one. My mother-in-law taught me to make this pie, and I love it. Here’s the recipe – enjoy!
CREAM CHEESE PUMPKIN PIE
Combine the following and mix well:
8 oz. cream cheese, softened
¼ cup sugar
½ teaspoon vanilla
1 egg
Spread mixture on a 9” unbaked pie shell.
Combine the following and mix well:
16 oz. can pumpkin
½ cup sugar
1 teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg
dash of salt
Blend in:
2 slightly beaten eggs
1 cup evaporated milk
whipped topping (Cool Whip)
Carefully pour the pumpkin mixture over the cheese mixture. Bake at 350 degrees for 65-70 minutes, or until done. When cool, top with whipped topping. (I cover the entire pie with topping, unlike the picture above.)
