A Favorite "Tasty" Fall Dinner & Best of All (Besides the Taste!) It's Super Easy to Prepare!

This dinner menu is so wonderful for the Fall/Winter time!  A "comfort" dinner & very tasty!

We all want a nice dinner to enjoy, this menu is very simple, yet everyone will think you spent a long time preparing it!

ON THE MENU:

Baked BBQ Pork Chops ... Cheesy Scalloped Potatoes ... Green Beans Plain/or Casserole ... Hot Cinnamon Applesauce ... Dinner Rolls

             * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * * *         

BBQ Pork Chops

8 - 12 count pkg. Center Cut Pork Chops with the Bones

1 (18oz.) BBQ Sauce - use your favorite!

1 medium size Onion - Vidalia/Sweet/or Yellow - Cut in wedges or sliced.

Salt & Pepper to taste.

 

*Spread Onion on bottom of roasting pan. 

*Arrange pork chops on top of onions.

*Pour BBQ Sauce on top.

 

Cover roasting pan with lid.  Place in pre-heated oven: 350*

Bake for 1.5 hours.  Always test to make sure they are done.  The longer they bake, the more tender they are!

 

Cheesy Scalloped Potatoes

Okay, you can substitute (use) the box if you like (such as Betty Crocker's) & simply follow the directions ... they are amazingly good & very easy.  OR, homemade easy ... this is not hard, just a little bit of time in washing & peeling the potatoes.

6 - 8 Medium Potatoes - sliced for scalloped

1 Medium Vidalia or Sweet Onion - Chopped or cut in small wedges. 

4 - 5 Tsp. Butter or Smart Balance

1 Can Campbell's Cheddar Cheese Soup

1/2 cup Milk (or 2% Milk)

Salt & Pepper to taste - optional (sprinkle while arranging or add to soup/milk mixture)

*Peel potatoes & place in large bowl of cold water.  After all are peeled, then start slicing & put back in the bowl of water, (this prevents potatoes turning discolored).  Then rinse very well with water, (this removes the starch). Drain. Next, arrange potatoes & onions in layers (use a nice, deep baking dish: such as corning-ware).  Dot butter.  Mix soup & milk together & then pour on top of potatoes. 

Cover baking dish with lid.  Place in Oven: 350* ... Approx. 1.5 hours.  Remove the lid during the last 15 min. of baking to brown top.

 

GREEN BEANS

1 or 2 cans of Green Beans - Cut or String

Place in microwave safe bowl.  Season to taste.  Heat on High in microwave for apprx. 3.5 minutes.

OR make a

Green Bean Casserole

1 can Durkee Dried Onions

2 cans String Beans - Drained

1 can Campbell's Mushroom Soup

1 cup Milk (can use 2%)

Pepper to Taste.

Mix soup, milk, & pepper in the baking dish.  Then add the drained string beans.  Next mix in approx. 1/2 of the dried onions.  Reserve the rest for topping.

Bake in oven.  350* for 25 min.  Then carefully stir.  Then top with reserved dried onions.  Bake another 5 min. to brown top.

 

HOT Cinnamon Applesauce

1 jar - Cinnamon Applesauce - your favorite brand

Pour into microwave safe dish.  Cover dish with lid.  Heat on Power 50 for approx. 4 - 5 min.

Or if you prefer, just serve cold.

 

Dinner Rolls

1 pkg. of Fresh Dinner Rolls from the bakery

Bake dinner rolls in oven as directed on package.

 

Special Note:  You can bake the pork chops & potatoes in the oven at the same time.  Sometimes the potatoes take longer than the pork chops.  Then make room in the oven for the green bean casserole during the last 30 min. of baking.   If no room, then bake right after the pork chops &/or potatoes are done & remove one or both from oven.  Keep the lids on to stay warm.

You're so kind & funny!  Thanks & me, too!  I was thinking yummy while I was typing ... it took me longer to type out than planned and got me thinking about making this for dinner tonight!  (but we're going to a Halloween Party, so maybe tomorrow night!)
