Crab Louis Salad Recipe
Since we now can buy artificial crab meat, shrimp and lobster, I make lots of salads with seafood.
Try this one:
½ cup mayonnaise 1 ½ cup lump crabmeat or artificial crab meat
½ cup chili sauce lettuce
2 tbsp. chopped green pepper 2 tomatoes, quartered
2 tbsp chopped sweet pickle 2 green peppers, sliced
1 tbsp chopped onion 2 hard-cooked eggs, sliced
1 tbsp lemon juice
Combine mayo, chili sauce, chopped green pepper, sweet pickle, onion and lemon juice - blend well. Add crabmeat, tossed lightly. Chill thoroughly. At serving time, spoon on lettuce and garnish with tomatoes, green pepper slices, and eggs. Serves 4. I serve this with hot rolls or muffins.
