What do you do with your Pumpkin Seeds? I toast them for a delicious snack and have an easy Thanksgiving Treat!

  Pumpkins

Don’t throw away the Pumpkin Seeds. Here is an easy recipe to have a snack that most people will enjoy.

1.       Using a spoon scoop out the insides and the seeds from the Pumpkin.

2.        Separate the seeds from the stringy insides.

3.        Quickly rinse the seeds and then place the seeds in a boiling salt water (the more salt you add the saltier the seeds will be)

4.        Simmer for about 10 minutes.

5.        Spread about a couple of table spoons of olive oil on the bottom of a roasting pan.

6.        Preheat oven to 400 degrees

7.       Bake for about 10-20 minutes to your taste on the top rack

8.        Let it cool and serve to your friends

Thanksgiving Treat Toasted Pumpkin Seeds

Some people crack them open and eat the insides. Personally I think it is a lot of work, just eat it whole is my recommendation.

I didn't know you could eat Pumpkin seeds.  Are they as tasty as Sunflower seeds?

Pumpkin seeds are good...I've had them before. But have never cooked them myself.

Endre, yummmmmmy! I used to buy live pumpkins and do that but this year I went for reusable gigantic plastic pumpkin with a light kit. Actually its a foam type material so it is carve-able. But yes, your recipe looks good, fun with kids, and could even be modified with variations. Thanks so much for sharing.  Happy Thanksgiving!!!!

Coming back over from my healthy eating blog...

Yes, pumpkin seeds are very healthy indeed. Did you know that nuts are a great source of protein, give you a healthy energetic push, and prevent the 3pm lul? Granted they are fatty, it's the good fat and the vitamins and minerals far outweigh the fat anyway.

Keep the salt down and you are on the right track. I should have metnioed that before but was already wordy - LOL!

Russel and I count ours first. Then, for each pumpkin seed, we donate $1 to charitable and non-profit organizations like the San Diego Symphony, San Diego Gay Men's Chorus, San Diego Zoo, Red Cross, American Cancer Society, Muscular Dystrophy Association, Wounded Warriors, etc. We like to donate as much money as we can each year to lower our tax burden since we think that we can better determine how to spend our money than letting the governments do it.

I love toasted pumpkin seeds, but since I haven't carved a pumpkin in years I haven't had them in quite a while.  Now that I have a kid, though, I'm sure I will have many more toasted pumpkin seeds in my future for years to come.  Thanks for reminding me about thiese, I actually had forgotten about them :-) Kasey
