Secret Recipe Revealed - First Place Chicken Casserole

Okay, so I have never actually had this made with Chicken!  I think my mom found this recipe in a newspaper or magazine, and my wife adopted it as a leftover turkey user.  This is one of the reasons the leftover turkey is a must-have in our household!

 

First Place Chicken [Turkey] Casserole

3 cups chicken [turkey], cooked and dicedNo Pink Chickens Used in this Recipe

4 hard cooked eggs, chopped

2 cups cooked rice

1-1/2 cup celery, chopped

1 small onion, chopped

1 cup mayonnaise

1 can artichoke hearts, cut into quarters

small jar pimentos (optional--only for the color)

1 tsp. salt

2 Tbsp. lemon juice

2 cans cream of mushroom soup

1 cup bread crumbs

2 Tbsp. melted butter

Combine all ingredients except bread crumbs and butter, mixing well.  Pour into a 3 quart oblong casserole.  Combine melted butter and bread crumbs and sprinkle over top.  Bake at 350 degrees for 35-40 minutes or until bubbly and hot.

Sounds yummy! The ingredients read like you are making chicken salad and then lo and behold, you add mushroom soup, breadcrumbs and bake it.  I am intrigued.
