Thought I'd break away from the serious posting for a minute here to post something fun and useful: a time-saving recipe for Thanksgiving!
2 Bags frozen broccoli
1 large block of Velveeta
Ritz crackers
Cook up the 2 bags of broccoli by boiling or microwaving, whichever is your preferred method. For the sake of this recipe, you want the broccoli to be soft, so cook it well. Chop up the broccoli into smaller bits, if possible.
Cut the Velveeta into small cubes.
Place Ritz crackers in a large Zip-loc bag and crush with a rolling pin to make fine crumbs (you could cheat and use premade breadcrumbs, but why?)
In a casserole dish, layer broccoli and Velveeta so that you have a good mixture throughout the dish. Top with breadcrumbs. Bake in the oven until cheese is melted and serve.
Incidentally, this casserole makes a surprisingly good topping for turkey sandwiches the next day. Give it a try and tell me it's not the truth!
