For something different from typical turkey or ham.... Here is an offering for your Christmas table. With the Ted and green colors it adds a festive as well as healthy touch! Enjoy!
Stuffed Red and Green bell peppers
1 chopped onion
3 pieces of diced celery
1 can tomato sauce
3 cloves of garlic
1 tablespoon of olive oil
1 tablespoon of butter or bacon grease... (yes! WE use bacon grease!)
1 pound ground meat
Half a cup of bread crumbs
2 bell peppers (1 red, 1 green)
1 teaspoon Louisiana lightning strike or comparable hot sauce.
Half a cup of grated Parmesan cheese.
Cut each of the peppers in two pieces (half) and remove seeds and stems. Boil in salted water for 15 minutes. Remove from water. And place in greased casserole dish.
Sauté the veggies in the butter and olive oil, when the veggies are firm yet cooked through add the ground beef and cook until done, stirring frequently. When ground meat is done, add the bread crumbs except for enough to dust tops of the stuffed peppers with. Add the tomato sauce and summer for ten minutes.
Spoon mixture into peppers adding the rest of the bread crumbs and the parmesan
Bake in a preheated 350 degree oven for 30 minutes. Remove and alliow to rest for 10 Minutes before serving. Serve with extra hot sauce available.
